Jimbo’s Watermelon Pizza Recipe

On the first Friday of every month, the Museum partners with Jimbo’s… Naturally! to bring new ideas for tasty treats that families can make together at home. Using seasonal ingredients that can be found in the garden is a great way to engage children in activities and help them learn more about nutrition. For those ingredients you can’t get in your backyard, you can visit Jimbo’s!
This month, Jimbo’s is providing a fun recipe you can make from the comfort of your home – Watermelon Pizza! This yummy snack is the perfect way to cool off after a long summer day.
Ingredients:
1 organic watermelon
1 container organic strawberries
1 container organic blueberries
1 container dairy-free yogurt
Toasted organic coconut flakes
Directions
STEP 1
Have a grownup slice the watermelon. You will need a circle-shaped slice at ½”-1” thick.

STEP 2
Prepare your toppings. Slice the strawberries into round slices and cut the blackberries and blueberries in half.

STEP 3
Add a layer of dairy-free yogurt to the top of your watermelon. This will be the “melted cheese” of your pizza! We recommend using the “So Delicious” brand coconut milk yogurt.

STEP 4
Add a sprinkle of toasted coconut.

STEP 5
Add your “pepperoni” strawberries. The strawberries Jimbo’s used in this recipe were locally grown in Escondido at Be-Wise Ranch!

STEP 6
Add your “sausage” blackberries and “olive” blueberries! The blackberries were grown in Valley Center at Stehly Farms and the blueberries were grown in Pauma Valley at Fairfield Farms!

STEP 7
Have a grownup slice your watermelon pizza into triangle-shaped slices. Enjoy your “pizza!”
